It is Mother’s Day this Sunday, May 8. It is the day, as all should be, for remembering all the fond days that your Mother was there for you. She always knew what was needed to be said at the right moment. All mothers know the right remedy for each problem as they come up and they range from a kiss on a small cut or nick to a swift slap on the rear with varied power to meet the offense. Memories of my mother are filled with home baked bread, all kinds of soups, some with dumplings, and the pies. Pie was an art form with the lady. Apple and lemon meringue were the standbys and also the favorites with the family. The coconut meringue and banana cream were a real close second. The apple had an extra benefit that was understood but never talked about. My dad could not tolerate apples. Fresh from the tree and all the way thru the canning process he wouldn’t touch them. When asked, he said he ate to many as a kid. He did have an exception and that was applesauce cake with raisins,walnuts and with the home canned apples. I never liked the cake until I was about twenty when I started to appreciate it for all the flavors that were combined. Carrot cake was a close second. My mother loved making donuts but never do I remember her frosting one. She also made something called kuchen that were pastries filled with prunes and dates. It took some getting used to as a kid. I’m afraid that I might be giving the impression that my mother only made food for the benefit of the family. She had some great qualities as varied as other mothers. I will remember her as my mother. Sunday we will salute all mothers that are here and those remembered. There is nothing that compares to a hug from your mother. Happy Mother’s Day!
